Beth Ellen Burroughs
Beth Ellen Burroughs, 70, of Newtown passed away peacefully on November 15, 2024 at Yale New Haven Hospital after a hard fought four-year-long battle with aplastic anemia (bone marrow failure).
Beth was born on December 1, 1953, in Bridgeport, to William and Beverly Holmes. She graduated from Andrew Warde High School in Fairfield. She married George Burroughs in May 1976 and moved to Newtown in 1982 where she raised her three children.
Beth was a kind and caring person who was liked by all who were fortunate enough to get the chance to meet her. Her smile and vibrant natural auburn hair made a lasting and memorable impression. Cooking was her passion. She loved watching the Food Network, especially anything with Guy Fieri or Bobby Flay. Her family always said that if she were to have competed on the “Beat Bobby Flay” show, she would have been victorious.
Beth loved animals and would take in any stray that might show up at her front doorstep and give them a loving forever home. This included at one point taking in eleven cats left abandoned at a nearby home in her neighborhood. When not acting as the patron saint of stray animals, she would enjoy drinking her favorite cup of coffee while reading a Nora Roberts novel.
She is survived by her loving husband of 48 years George; her three children Adam, Ashley, and Brett; her sister Amy and brother-in-law Ray Sakso; her niece Caitlin Sakso, and extended family.
In lieu of flowers, the family asks that blood donations in Beth’s memory be made to the American Red Cross.
