Nutmeg Celiac Support Group

DANBURY — The speaker for the first meeting of 2005 for the Celiac Support Group will be Bill Peck, a member of the organization that involves people who have been diagnosed with the condition called Celiac Sprue and who must avoid all foods that contain gluten.

The meeting will be held on Friday, January 14, at the Center for Behavioral Health on Lake Avenue, at 7:30 pm.

Mr Peck will discuss the one-day course that he attended at The Culinary Institute of America in Hyde Park, N.Y. It was a gluten-free baking class for those people who want to prepare their own meals without including any wheat, oats, barley, or rye flours.

How to prepare gluten free, fresh-baked foods including snacks, pies, and cakes were demonstrated by master chefs who understand the problems that the removal of gluten from the necessary ingredients of baked goods brings to the cook.

The public is invited to attend and recipes that are reliable will be available.
